Fire-Grilled Roasted Greek Salmon

Ingredients
- Olive oil spray
- 1 pound salmon with skin on tail pieces work well and are usually cheaper
- 2–3 ounces fresh baby spinach
- 2 ounces crumbled feta
- ⅛–¼ cup sliced Kalamata olives
Instructions
- Spray middle of large piece of heavy duty 18-inch aluminum foil with oil and place salmon in middle of foil. Top with spinach, feta, and olives in this order.
- Fold foil over salmon, and tuck ends under salmon. Place on grilling rack over fire and listen for sizzle (about 10 minutes). Flip and cook for another 10 minutes.
- Remove from grill and open carefully to avoid steam burn.
