Fire-Grilled Roasted Greek Salmon

Ingredients
  

  • Olive oil spray
  • 1 pound salmon with skin on tail pieces work well and are usually cheaper
  • 2–3 ounces fresh baby spinach
  • 2 ounces crumbled feta
  • ⅛–¼ cup sliced Kalamata olives

Instructions
 

  • Spray middle of large piece of heavy duty 18-inch aluminum foil with oil and place salmon in middle of foil. Top with spinach, feta, and olives in this order.
  • Fold foil over salmon, and tuck ends under salmon. Place on grilling rack over fire and listen for sizzle (about 10 minutes). Flip and cook for another 10 minutes.
  • Remove from grill and open carefully to avoid steam burn.
