1poundsalmon with skin ontail pieces work well and are usually cheaper
2β3 ounces fresh baby spinach
2ouncescrumbled feta
β βΒΌ cup sliced Kalamata olives
Instructions
Spray middle of large piece of heavy duty 18-inch aluminum foil with oil and place salmon in middle of foil. Top with spinach, feta, and olives in this order.
Fold foil over salmon, and tuck ends under salmon. Place on grilling rack over fire and listen for sizzle (about 10 minutes). Flip and cook for another 10 minutes.
Remove from grill and open carefully to avoid steam burn.
